(CNN) -- Sometimes sweet, sometimes sophisticated, but always regal on the runway. That's how 23-year-old Honor Fraser, the Scottish-born beauty with ties to British nobility, is described time and time again.

Fraser had plans to go to Edinburgh University, but ended up taking a year out of school. It was while working at British Vogue that a stylist suggested she give modeling a try.

"I kind of got an agent in Paris, thanks to her, and I carried on. I never went back to my original plans," she says.

But it wasn't until Fraser cut her hair that her career took off.

"I kind of felt much stronger and much more confident, and I really got into it and started enjoying what I was doing," she says. "I started to like the pictures I was doing, and that's really rewarding when you start liking what you've done."

In the beginning, Fraser focused mainly on print campaigns. It was designer Christian Lacroix that finally got her up onto the catwalk.

"I love (the catwalk) in fact," she says. "It's so completely different, you know. It's fast, it's mad, it's crazy. There's that amazing moment when you're pushed out and any instruction you've been given, you completely forget it. You're entirely on your own."

To keep up with her hectic lifestyle, Fraser says she keeps parties to a minimum. She never exercises, but does adhere to a strict diet.

"I'm kind of a rabbit-food person, but you know, you have to be quite consistent about that," she says. "There are often cookies and those things around and if you just get too used to grabbing a cookie at any point, it won't work."

Quiet time and rest also play important roles in keeping Fraser fit, especially when she's on the road.

New York is her favorite work destination.

"As soon as I get there, I buy (city guide) TimeOut and I just follow anything that I'm remotely interested," Fraser says. "I have family here, and I have friends here, so I just sort of rejuvenate. You know, I kind of build myself back up again through that."

Although she loves the modeling business, Fraser says she wouldn't mind going back to school.

"I'd really love to go to NYU (New York University)," she says.

But that doesn't mean the 23-year-old is ready to leave modeling.

"I just see it getting more and more exciting the further you get into it," she says.
